Italian Meatloaf Recipe

For the Meatloaf:

  • 1 lb (450 g) ground beef
  • 1 lb (450 g) ground pork
  • 1 cup Italian breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Topping:

  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

Preparation:

  1. Preheat the Oven (5 minutes): Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.

  2. Mix the Meatloaf Ingredients (10 minutes): In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, mozzarella cheese, chopped onion, minced garlic, eggs, milk, parsley, oregano, basil, salt, and pepper. Mix until well combined but do not overmix to avoid a dense meatloaf.

  3. Shape the Meatloaf (5 minutes): Transfer the meat mixture into the prepared loaf pan, pressing it down evenly.

  4. Bake the Meatloaf (45 minutes): Place the loaf pan in the preheated oven and bake for 45 minutes.

  5. Add the Topping (5 minutes): Remove the meatloaf from the oven and spread the marinara sauce over the top. Sprinkle shredded mozzarella and Parmesan cheese on top of the sauce.

  6. Bake Again (10 minutes): Return the meatloaf to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  7. Rest and Serve (10 minutes): Allow the meatloaf to rest for 10 minutes before slicing. Serve with additional marinara sauce or a side of pasta, if desired.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • Leftover meatloaf makes great sandwiches. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For an extra crispy topping, broil for 2-3 minutes at the end of baking.
