Mexican Lasagna Recipe

Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (10 oz) enchilada sauce
  • 8 small flour tortillas (or corn tortillas)
  • 2 cups shredded Mexican blend cheese
  • 1 cup sour cream
  • 1 cup salsa
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.

  2. Cook Ground Beef: In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.

  3. Add Flavor: Add chopped onion and minced garlic to the skillet. Sauté until the onion is soft and translucent.

  4. Seasoning: Mix in the taco seasoning, then add black beans, corn, diced tomatoes with green chilies, and enchilada sauce. Stir well and let simmer for 5 minutes.

  5. Assemble Lasagna: Spread a thin layer of the meat mixture on the bottom of the baking dish. Place a layer of tortillas over it, followed by more meat mixture, then cheese. Repeat the layers, finishing with cheese on top.

  6. Bake: Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.

  7. Garnish and Serve: Let the lasagna sit for 5 minutes before serving. Top with sour cream, salsa, and fresh cilantro if desired.

Notes

  • For a spicier kick, add sliced jalapeños to the meat mixture or on top as a garnish.
  • You can substitute ground beef with ground turkey or chicken for a leaner option.
