Mexican Lasagna Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning mix
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn kernels, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 can 10 oz enchilada sauce
  • 8 small flour tortillas or corn tortillas
  • 2 cups shredded Mexican blend cheese
  • 1 cup sour cream
  • 1 cup salsa
  • Fresh cilantro chopped (optional)

Instructions
 

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  • Cook Ground Beef: In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add Flavor: Add chopped onion and minced garlic to the skillet. Sauté until the onion is soft and translucent.
  • Seasoning: Mix in the taco seasoning, then add black beans, corn, diced tomatoes with green chilies, and enchilada sauce. Stir well and let simmer for 5 minutes.
  • Assemble Lasagna: Spread a thin layer of the meat mixture on the bottom of the baking dish. Place a layer of tortillas over it, followed by more meat mixture, then cheese. Repeat the layers, finishing with cheese on top.
  • Bake: Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  • Garnish and Serve: Let the lasagna sit for 5 minutes before serving. Top with sour cream, salsa, and fresh cilantro if desired.

Notes

  • For a spicier kick, add sliced jalapeños to the meat mixture or on top as a garnish.
  • You can substitute ground beef with ground turkey or chicken for a leaner option.
